Tzatziki
Cool and refreshing tzatziki yogurt sauce, with fresh mint
Tzatziki is our go-to when grilling Mediterranean-style spreads, especially delicious with lamb, chicken, and salmon.
Tzatziki recipe
Makes a little over a cup
Ingredients:
- 1 cup plain, full-fat Greek yogurt (low-fat works too) 
- 1 clove garlic, crushed or minced fine 
- 1/2 cucumber, peeled 
- 2 tablespoons finely minced mint 
- 2 tablespoons olive oil 
- 1 squeeze lemon juice 
- Salt to taste 
Instructions:
Grate the cucumber using the large holes of a grater, then squeeze and drain excess liquid. Stir all ingredients together. Important: taste and add what you think it needs to make it just right.
Note: add about 1/4 cup crumbled feta for a delicious dip with toasted pita.
