Anchovy butter recipe
Makes a small hors d’oeuvre serving
Ingredients:
4 tablespoons softened, unsalted butter
6 anchovy filets, oil-packed (you can use fewer anchovies for a less powerful flavor)
Instructions:
Chop anchovies super fine, or mash them to a paste in a mortar and pestle. Don’t worry about the tiny bones. Stir anchovies and butter together and serve at room temperature with cold radishes, or spread on good bread.
